About the Recipe

Ingredients
3 medium zucchini, chopped
1 medium onion, diced
3 cloves garlic
2 cups vegetable or chicken broth
1/2 cup heavy cream or coconut cream
Olive oil, salt, pepper
Optional: fresh basil or dill for garnish
Preparation
Sauté onion and garlic in olive oil over medium heat until soft.
Add zucchini and cook 5 minutes.
Pour in broth and simmer 15 minutes until zucchini is tender.
Blend until smooth with an immersion blender.
Stir in cream, season with salt and pepper, and serve warm.
