I headed out off the coast of Florida to catch some beautiful Yellowtail Snapper, and I’m showing you exactly how to turn this fresh catch into a restaurant-quality meal. This snapper with a homemade Thai coconut sauce is the perfect balance of citrus, spice, and savory.

Ingredients

Fresh Yellowtail Snapper

2 tbsp Coco Reàl

2 cups Soy Sauce

1 cup Fish Sauce

1 cup Fresh Lime Juice (8 limes)

3 cups Coconut Milk

1 cup Rice Wine Vinegar

1/2 cup Sesame Oil

1 oz (30 ml) Habanero Pepper, Chopped

1 tbsp Minced Fresh Ginger

1 tsp Cornstarch

1 tsp Water

Fresh Mint, For Garnish

Fresh Cilantro, For Garnish

Chopped Peanuts, For Garnish

Preparation

Step 1

Combine all ingredients except the cornstarch and water in a saucepot, and bring to a simmer.


Step 2

Combine cornstarch and water, mixing well. Stir this into the sauce and bring to a boil.

Add fish and simmer until cooked through (8-10 min).

Garnish with fresh mint, cilantro, and peanuts.

Serve over white rice.
