Wild Pig - Pork Carnitas

About the Recipe

Ingredients

1 pork butt (shoulder)

1/2 cup olive oil

3/4 cup balsamic vinegar

1/2 bottle Mojo marinade

6 cloves garlic

1 small onion

3 oranges juiced

6 limes juiced

1 small onion

green scallions (optional)

2 tsp black pepper

6 T salt

4 bay leaves

1 tsp smoked paprika

1 tsp ground coriander

1 T ground cumin


Preparation

Chop garlic, onion, and green onions

Juice oranges and limes

Combine all wet ingredients (juice, olive oil, balsamic vinegar, marinade)

Add in seasonings (coriander, paprika, cumin, salt, pepper, bay leaves)

Add in onions and garlic

Reserve 1 cup marinade

Marinate meat overnight in the marinade

Smoke meat at 250 degrees in smoker for 6-8 hours until internal temperature reaches 203 degrees

Shred meat

Add remaining marinade to cast iron skillet

Fry shredded pork in cast iron skillet until brown and crispy

Serve on tortillas with your favorite toppings (tortillas, cojita cheese, avocados, tomatoes, green salsa, cilantro)
