About the Recipe

Ingredients

  • 2 large acorn or butternut squash, halved and seeded

  • 1 lb ground meat or sausage

  • 1 cup cooked rice or quinoa

  • 1 cup diced tomatoes

  • 1/2 onion, diced

  • 2 cloves garlic, minced

  • 1/2 cup shredded cheese

  • Salt, pepper, Italian seasoning to taste

Preparation

  1. Preheat oven to 400°F. Brush squash halves with oil, place cut-side down on a baking sheet.

  2. Roast 30 minutes until tender.

  3. Meanwhile, brown the meat with onion and garlic. Drain fat.

  4. Mix in rice, tomatoes, and seasoning.

  5. Flip squash cut-side up and fill each half with the meat mixture.

  6. Top with cheese and bake another 10–15 minutes until bubbly.
