Ingredients
2 large acorn or butternut squash, halved and seeded
1 lb ground meat or sausage
1 cup cooked rice or quinoa
1 cup diced tomatoes
1/2 onion, diced
2 cloves garlic, minced
1/2 cup shredded cheese
Salt, pepper, Italian seasoning to taste
Preparation
Preheat oven to 400°F. Brush squash halves with oil, place cut-side down on a baking sheet.
Roast 30 minutes until tender.
Meanwhile, brown the meat with onion and garlic. Drain fat.
Mix in rice, tomatoes, and seasoning.
Flip squash cut-side up and fill each half with the meat mixture.
Top with cheese and bake another 10–15 minutes until bubbly.
