Ingredients
Potatoes
1/2 onion
1 clove garlic, minced
1 T butter
1 T duck fat
1 T fresh rosemary, chopped
Preparation
Peel and slice potatoes.
Place in a bowl of cold water.
Dice onion and chop rosemary.
Melt butter and duck fat in a pan.
Sauté onion, garlic, and rosemary.
Pat potatoes dry and remove onion mixture from pan.
Make sure oil coats the sides of the pan.
Layer potatoes in the bottom of the pan in a rosette pattern.
Add a couple tsp of the onion mixture on top of each potato layer.
Repeat until the pan is full.
Cook uncovered 45–60 min at 350°F.
