About the Recipe

Ingredients
2 cups fresh basil leaves, rinsed
1/2 cup fresh Parmesan or Romano cheese
1/3 cup pine nuts (or walnuts)
3 garlic cloves, minced
Olive oil (poured during blending)
1/4 tsp salt
1/8 tsp pepper
Pasta of your choice
Optional: extra Parmesan and fresh tomatoes
Preparation
Mince the garlic and ensure basil leaves are rinsed and separated.
Place basil and pine nuts into a food processor and pulse.
Add garlic and Parmesan. Scrape down the sides and pulse a few more times.
While blending, slowly pour olive oil through the feed tube until it reaches a paste-like consistency.
Add salt and pepper, then blend briefly to combine.
Toss with cooked pasta and top with extra Parmesan and tomatoes if desired.
