About the Recipe

Ingredients

  • 2 cups fresh basil leaves, rinsed

  • 1/2 cup fresh Parmesan or Romano cheese

  • 1/3 cup pine nuts (or walnuts)

  • 3 garlic cloves, minced

  • Olive oil (poured during blending)

  • 1/4 tsp salt

  • 1/8 tsp pepper

  • Pasta of your choice

  • Optional: extra Parmesan and fresh tomatoes

Preparation

  1. Mince the garlic and ensure basil leaves are rinsed and separated.

  2. Place basil and pine nuts into a food processor and pulse.

  3. Add garlic and Parmesan. Scrape down the sides and pulse a few more times.

  4. While blending, slowly pour olive oil through the feed tube until it reaches a paste-like consistency.

  5. Add salt and pepper, then blend briefly to combine.

  6. Toss with cooked pasta and top with extra Parmesan and tomatoes if desired.
