About the Recipe

Ingredients

  • 1 lb alligator tail meat, cubed

  • 1 lb andouille sausage, sliced

  • 2 cups long-grain white rice

  • 1 can diced tomatoes

  • 1 onion, diced

  • 3 cloves garlic

  • Bell pepper and celery (the holy trinity)

  • Slap Ya Mama seasoning to taste

  • 2–3 cups chicken broth

Preparation

  1. Brown alligator and sausage in a Dutch oven over campfire or stovetop.

  2. Add onion, bell pepper, celery, and garlic — cook until soft.

  3. Stir in tomatoes, rice, broth, and seasoning.

  4. Bring to a boil, cover, and simmer 20–25 minutes until rice absorbs liquid.

  5. Fluff and serve hot.
