Ingredients
1 lb alligator tail meat, cubed
1 lb andouille sausage, sliced
2 cups long-grain white rice
1 can diced tomatoes
1 onion, diced
3 cloves garlic
Bell pepper and celery (the holy trinity)
Slap Ya Mama seasoning to taste
2–3 cups chicken broth
Preparation
Brown alligator and sausage in a Dutch oven over campfire or stovetop.
Add onion, bell pepper, celery, and garlic — cook until soft.
Stir in tomatoes, rice, broth, and seasoning.
Bring to a boil, cover, and simmer 20–25 minutes until rice absorbs liquid.
Fluff and serve hot.
