Ingredients
Several lbs fresh crawfish (live)
2 bulbs of garlic
4 lemons
2 large onions
1 large pkg fresh mushrooms
1 bag small red potatoes
Fresh corn on the cob (2–4 pieces)
1 pkg Andouille sausage
Crawfish boil seasoning
Preparation
Slice garlic bulbs in half.
Slice onions and lemons in half.
Shuck corn and break pieces in half.
Slice sausage into bite-sized pieces.
Pour crawfish boil seasoning into a large pot of water and heat to boiling.
Rinse (purge) crawfish.
Add potatoes, lemons, and garlic halves to the boiling water.
Once boiling, add onion and cook 5 min.
Add crawfish and cook 5 min.
Turn heat off, add sausage, mushrooms, and corn. Stir and let sit 25 min.
Scoop out crawfish and everything else from the liquid.
Serve on a large tray with plenty of paper towels. Enjoy!
